David's Opening Day BratsBaseball season’s Opening Day is a fave day for our family. Like, holiday status fave day. And, like every other holiday we celebrate with the fam, the special day includes a special menu as a part of the deal.

So, for this most happy of spring-time occasions, I give you:

David’s Opening Day Brats


Prep/Cook Time: 45 minutes





3 large sweet yellow onions

2 Tablespoons Olive Oil

1 small can of Chipotle en adobo sauce

2 Tablespoons yellow mustard

2 Tablespoons brown mustard

1 Tablespoon creole mustard

2 Shiners (or your favorite dark beer)

1 Dos XX (or your favorite beverage of choice to drink while you cook)

1 package bratwurst

1 package hoagie buns


IMG_0393Slice onions into thin slices

Heat 2 Tablespoons of Olive Oil in stock pot over medium-low heat

Add onions. Slowly sweat onions down over medium-low heat till onions are clear.


While onions cook, prepare your chipotle mustard:


In food processor, mix 1 Chipotle en adobo plus 2 Tablespoons of the sauce with 2 Tablespoons yellow mustard, 2 Tablespoons brown mustard and 1 Tablespoon Creole mustard. Blend till smooth.


IMG_0426When onions are clear, add 2 Shiners and bring to low simmer. Add brats. Simmer for 10-15 minutes or until thermometer inserted into brat reads 160 degrees.


Remove brats from pan and grill till browned.


To serve, place brat on hoagie bun and dress with chipotle mustard and sweet grilled onions.IMG_0428


You always get a special kick on opening day, no matter how many you go through. You look forward to it like a birthday party when you’re a kid. You think something wonderful is going to happen.
