Besides providing great entertainment, a trip to the farmers market is one of the best ways to expand your recipe repertoire. Get creative by combining tried and true favorites to create a new dish, like my Pesto Creamed Corn. In addition to shopping for your regular fare, make a point to try something new and different as well. When selecting new produce for the first time, ask growers for input on how to prepare it. Rest assured, they know! Take your haul home and enjoy your fruits of the earth. This is entertainment everyone can feel good about.

Pesto Creamed Corn

4-5 ears corn

¼ cup basil pesto

1 tablespoon butter

¼ cup heavy cream

2 tablespoons parmesan cheese

Salt to taste

Cut corn from the cob and put it in a chef’s pan over medium heat. Add butter and sauté corn for 2-3 minutes. Add remaining ingredients and mix well. Turn heat to a simmer and cook until most of the liquid has evaporated and sauce has thickened, another 2-3 minutes.

1½ cups fresh basil compacted

2 cloves garlic

1/3 cup walnuts

1/3 cup parmesan cheese grated

3 tablespoons olive oil

½ teaspoon salt

Place basil, garlic, walnuts, salt in food processor, pulse until smooth, add parmesan, olive oil and process until mixed well. Pesto with be a thick paste, add additional olive oil if desired.
