The 4th of July promises to deliver a long weekend of fun in the sun. Whether you are planning a huge patriotic party or a picnic in the bed of a truck, spending some time together is the name of the game. When I think about the 4th one word comes to mind: food! Food seems to be the barometer for all holidays for me and when it is hot outside we need something cold and crisp on our pallet to dissipate the heat. My sweet Watermelon and Feta Salad is simple to make and is the perfect complement to whatever you are serving this weekend from burgers to beluga. Share some food with family and friends and enjoy our nation’s independence!
Watermelon and Feta Salad
Juice and zest form one orange
Juice and zest form 1 lemon
1 shallot minced
¼ cup olive oil
1 teaspoon honey
Salt and pepper to taste
5 cups seedless watermelon cut into 1 inch chunks
½ red onion sliced thinly
½ cup mint leaves
½ cup feta cheese cubes or crumbles
To prepare the salad dressing, mix all ingredients in a jar and shake well. Place salad ingredients in a bowl and toss well with dressing.
